How to Make a Lychee Martini Cocktail

A modern classic born from the East-meets-West cocktail movement of the early 2000s, the Lychee Martini has seen countless interpretations since, and this is our take. Exotic, floral, and delightfully chic, it pairs the clean juniper backbone of Tanqueray London Dry Gin with sweet lychee, fragrant rose petal liqueur, and a bright hit of yuzu. A touch of aquafaba brings a silky texture and elegant froth, while a few dashes of Peychaud's bitters add subtle depth and a beautiful blush of colour beneath the surface. Sophisticated, fragrant, and a little bit different, exactly what a great martini should be.

Ingredients:
40ml Tanqueray London Dry Gin
15ml Rose Petal Liqueur
25ml Lychee Juice (or 2 Lychees, muddled)
10ml Yuzu Juice
15ml Aquafaba
2 Dashes Peychaud's Bitters
Fresh Lychee (garnish)
Edible Flower (garnish, optional)

How to make:
Add the gin, rose petal liqueur, lychee juice, yuzu juice, and aquafaba into a cocktail shaker without ice.
Dry shake hard for 10–15 seconds to fully emulsify the aquafaba and build a good froth.
Add ice to the shaker and shake again for a further 10–15 seconds until well chilled.
Double strain into a chilled martini glass.
Add the Peychaud's bitters dashes on top of the foam, allowing them to bloom and settle naturally.
Garnish with a fresh lychee and an edible flower, if using.
Serve immediately.
