Bright, sweet, and slightly tart, the Clover Club is a pre-Prohibition classic that has earned its place on every great cocktail menu, and this vodka riff on the original is our favourite take. Where the traditional recipe calls for gin, Ketel One Vodka creates a clean, neutral canvas that lets vibrant raspberry and fresh citrus take full centre stage. Aquafaba brings the signature smooth, blush-pink top that makes this serve as beautiful as it is delicious. A cocktail that consistently steals the show and one of the most photographed serves we pour.

Ingredients:

  • 40ml Ketel One Vodka

  • 20ml Raspberry Syrup

  • 20ml Fresh Lemon Juice

  • 15ml Aquafaba

  • Lemon Zest (garnish)





How to make:

  1. Select and pre-chill a coupe glass.

  2. Prepare the lemon zest twist garnish.

  3. Add the Ketel One Vodka, raspberry syrup, fresh lemon juice, and aquafaba into a cocktail shaker without ice.

  4. Dry shake hard for 10–15 seconds to fully emulsify the aquafaba and build a good froth.

  5. Add ice to the shaker and shake again for a further 10–15 seconds until well chilled.

  6. Double strain into a chilled coupe glass.

  7. Garnish with the lemon zest twist  placed gently on the side of the glass.

  8. Serve immediately.

Story behind the Serve

Originally crafted for a 40th birthday celebration in Summer 2023, this vibrant cocktail was designed to capture the spirit of the occasion: bright & unforgettable.

The Clover Club is one of the great pre-Prohibition cocktails, named after a gentlemen's club in Philadelphia that met at the Bellevue-Stratford Hotel in the late 19th and early 20th centuries. The original recipe, gin, raspberry syrup, lemon juice, and egg white, became a fixture of the era's cocktail culture before largely disappearing during Prohibition, only to be rediscovered by the modern craft cocktail movement in the early 2000s. This version swaps gin for Ketel One Vodka, letting the raspberry and citrus speak without competition from botanical notes, a cleaner, more accessible take on a the historic serve.
